frontbookIn making this book we wanted to show you a greater number of the many sides to Japanese food – by breaking out of old stereotypes and introducing new styles and themes. We hope you’ll enjoy the restaurants listed in this book. Most of them have Japanese chefs who use their skills to offer services and food that reflect their own particular customs and culture.

In Japan, restaurants tend to go by themes – such as dining style, or the type of food. Specialist yakitori and ramen shops are only a couple of examples. This means that when it comes to Japanese food, customers choose their restaurant by what dish they want to eat, rather than just heading out to a “Japanese restaurant”, or for a general “Japanese meal”.
This specialization is due to Japan’s highly competitive environment, where restaurants have to focus on constantly creating new food sensations using a rich and varied number of ingredients. Chefs carefully scrutinize each ingredient they use, to divine its essence; then they work hard to keep things consistent, whilst thinking up new ways to improve service, and to bring in more customers.
This may seem an exciting and a fresh approach for most non-Japanese people, and indeed, Japanese food is currently enjoying a global boom in popularity.inside1
